Natural

Natural cocoa powder is in its unaltered, raw state. It exhibits a lighter brown hue and has a lower pH level. It retains more of the original cocoa characteristics, imparting a distinctive flavor to desserts and beverages.

Alkalized

Alkalized cocoa powder, often referred to as Dutch Process, undergoes a treatment with an alkali solution, resulting in a higher pH level. This process reduces acidity and darkens the powder's color, which can range from deep reddish-brown to nearly black.
